Zucchini in Salsa Verde

This pork with zucchini and green sauce recipe is a traditional, comforting, and flavorful dish. The key is using a good sauce: La Sabrozita's Green Sauce, made with natural ingredients and a homemade flavor that elevates any stew. Perfect for a complete weeknight meal or to share with the family.

Ingredients (serves 4–6)
500g pork (boneless rib, loin, or leg), cubed

3 zucchini, diced medium

1/2 white onion, finely chopped

2 garlic cloves, minced

2 serrano or jalapeño peppers (optional, to taste)

1/2 cup chicken broth or water

1 cup La Sabrozita Salsa Verde

Vegetable oil

Salt and pepper to taste

Chopped cilantro (optional, for garnish)

How to prepare pork with zucchini and salsa verde
1. Brown the meat
In a large pot or skillet, heat a little oil. Add the pork cubes, previously seasoned with salt and pepper.
Brown well until sealed and lightly browned (8–10 minutes). If they release too much fat, remove the excess.

2. Sauté the aromatics
Add the garlic, onion, and chopped chilies. Cook everything together for 2–3 minutes, until the onion is translucent.

3. Cook with broth and salsa
Pour in the chicken broth and add La Sabrozita Salsa Verde. Mix well, cover, and cook over medium-low heat for 15–20 minutes, until the meat is tender and juicy.

4. Add the zucchini
Add the diced zucchini. Cover and cook for 5–7 more minutes, until tender but not falling apart.

5. Adjust and serve
Taste and adjust salt and pepper. Serve hot, with fresh cilantro if desired.

Ideal Side Dishes
White or red rice

Pot or refried beans

Warm corn tortillas

Sliced avocado
